Kibbeling
Kibbeling is a traditional Dutch snack, which is made of battered chunks of fish, usually cod, that are deep-fried. It's a popular street food and is often served with a mayonnaise-based garlic or tartar sauce.
Ingredients - Serves 4
- Garlic - 2 cloves, minced, for serving
- Mayonnaise - For serving
- Vegetable oil - For frying
- Beer - 1 cup
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Flour - 1 cup
- Cod fillets - 500 grams, cut into chunks
Let's Get Started
- In a large bowl, mix together the flour, baking powder, salt, and pepper.
- Gradually add the beer, whisking until the batter is smooth.
- Heat the vegetable oil in a deep fryer or large, deep saucepan to 375°F (190°C).
- Dip the fish chunks into the batter, letting the excess drip off.
- Fry the fish in batches in the hot oil until golden brown and crispy, about 5 minutes. Drain on paper towels.
- In a small bowl, mix together the mayonnaise and minced garlic.
- Serve the kibbeling hot with the garlic mayonnaise.
