Keto Shepherd's Pie
This keto-friendly version of Shepherd's Pie is made with ground beef, low-carb vegetables, and topped with a creamy cauliflower mash.
Ingredients - Serves 6
- Parsley - 2 tablespoons, chopped
- Parmesan cheese - 1/4 cup, grated
- Heavy cream - 1/4 cup
- Butter - 4 tablespoons
- Cauliflower - 1 large head, cut into florets
- Salt and pepper - To taste
- Dried thyme - 1 teaspoon
- Worcestershire sauce - 1 tablespoon
- Beef broth - 1 cup
- Tomato paste - 2 tablespoons
- Frozen peas - 1 cup
- Celery - 2 stalks, diced
- Carrots - 2 medium, diced
- Garlic - 2 cloves, minced
- Onion - 1 medium, diced
- Ground beef - 1.5 pounds
Let's Get Started
- Preheat the oven to 375°F.
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the diced onion, minced garlic, carrots, and celery to the skillet. Cook until the vegetables are tender, about 5 minutes.
- Stir in the frozen peas, tomato paste, beef broth, Worcestershire sauce, dried thyme, salt, and pepper. Simmer for 10 minutes.
- Meanwhile, steam the cauliflower florets until tender. Drain well.
- In a separate bowl, mash the cauliflower with butter, heavy cream, and grated Parmesan cheese until smooth. Season with salt and pepper to taste.
- Transfer the beef and vegetable mixture to a baking dish. Spread the cauliflower mash evenly over the top.
- Bake for 20 minutes, or until the top is golden and the filling is bubbling.
- Garnish with chopped parsley before serving.
