Let's Get Started
- Preheat the oven to 325°F.
- Cut the pork shoulder into large chunks.
- In a small bowl, mix together the minced garlic, cumin, oregano, smoked paprika, salt, black pepper, lime juice, and avocado oil to make a marinade.
- Rub the marinade all over the pork shoulder chunks, ensuring they are well coated.
- Place the pork shoulder chunks in a large oven-safe dish and add the water to the dish.
- Cover the dish with foil and roast in the preheated oven for 3-4 hours, or until the pork is tender and easily shreds with a fork.
- Once the pork is cooked, remove it from the oven and let it cool slightly.
- Using two forks, shred the pork into smaller pieces.
- Heat a large skillet over medium-high heat and add the shredded pork, cooking until it becomes crispy and browned, about 5-7 minutes.
- Serve the keto pork carnitas in lettuce wraps or low-carb tortillas, and garnish with your favorite toppings such as avocado, salsa, and cilantro.
