Keto Cauliflower Mac and Cheese
This keto-friendly version of mac and cheese replaces traditional pasta with cauliflower for a low-carb and delicious alternative.
Ingredients - Serves 4
- Fresh parsley - 2 tablespoons, chopped (for garnish)
- Salt and pepper - To taste
- Onion powder - 1 teaspoon
- Garlic powder - 1 teaspoon
- Parmesan cheese - 1/2 cup, grated
- Cheddar cheese - 1 cup, shredded
- Cream cheese - 4 oz
- Heavy cream - 1 cup
- Cauliflower - 1 large head, cut into florets
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Steam or boil the cauliflower florets until tender, about 5-7 minutes. Drain well.
- In a saucepan, heat the heavy cream over medium heat until hot but not boiling.
- Add the cream cheese, cheddar cheese, and Parmesan cheese to the saucepan. Stir until melted and smooth.
- Stir in the garlic powder, onion powder, salt, and pepper.
- Add the cooked cauliflower to the saucepan and gently stir to coat the florets with the cheese sauce.
- Transfer the cauliflower mixture to a baking dish and spread it out evenly.
- Bake in the preheated oven for 15-20 minutes, or until the top is golden and bubbly.
- Garnish with fresh parsley before serving.
