Keto Brussels Sprouts Au Gratin
This keto-friendly Brussels sprouts au gratin is a delicious and cheesy side dish that is low in carbs.
Ingredients - Serves 6
- Unsalted butter - 2 tablespoons, melted
- Almond flour - 1/4 cup
- Black pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Garlic powder - 1 teaspoon
- Grated parmesan cheese - 1 cup
- Heavy cream - 1 cup
- Brussels sprouts - 1.5 pounds, trimmed and halved
Let's Get Started
- Preheat the oven to 375°F (190°C).
- Bring a large pot of salted water to a boil. Add the Brussels sprouts and cook for 5 minutes. Drain and set aside.
- In a saucepan, heat the heavy cream over medium heat until hot but not boiling.
- Stir in the grated Parmesan cheese, garlic powder, salt, and black pepper until well combined and the cheese is melted.
- In a separate bowl, mix the almond flour and melted butter together to form a crumbly mixture.
- Place the blanched Brussels sprouts in a baking dish and pour the cheese sauce over them. Mix well to coat the sprouts.
- Sprinkle the almond flour mixture evenly over the top of the Brussels sprouts.
- Bake in the preheated oven for 20-25 minutes, or until the top is golden and bubbly.
- Remove from the oven and let it cool for a few minutes before serving.
