Kefta Mkaouara
Kefta Mkaouara is a traditional Moroccan dish of meatballs in a spicy tomato sauce, often served with eggs.
Ingredients - Serves 4
- Eggs - 4
- Tomato paste - 2 tablespoons
- Tomatoes - 4, chopped
- Onion - 1, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Cumin - 1 teaspoon
- Parsley - 1/4 cup, chopped
- Garlic - 2 cloves, minced
- Ground beef - 1 lb
Let's Get Started
- In a bowl, mix the ground beef, garlic, parsley, cumin, paprika, salt, and pepper. Form into small meatballs.
- Heat the olive oil in a large pan over medium heat. Add the meatballs and cook until browned on all sides. Remove from the pan and set aside.
- In the same pan, add the onion and cook until softened. Add the tomatoes, tomato paste, and a pinch of salt and pepper. Cook until the tomatoes break down into a sauce.
- Return the meatballs to the pan and simmer in the sauce for 20 minutes.
- Make four wells in the sauce and crack an egg into each well. Cover the pan and cook until the eggs are set.
- Serve the meatballs and sauce with bread for dipping.
