Katsu Curry Sandwich

Let's Get Started

  1. Preheat the oven to 400°F.
  2. Season the chicken breasts with salt and pepper.
  3. Dip each chicken breast into flour, then beaten egg, and finally coat with panko breadcrumbs.
  4. Place the breaded chicken breasts on a baking sheet and bake for 20-25 minutes, or until golden and crispy.
  5. While the chicken is baking, prepare the curry sauce. Heat a tablespoon of oil in a saucepan over medium heat.
  6. Add the sliced onion, carrot, and diced potato. Cook until the vegetables are softened.
  7. Add the curry powder and cook for another minute.
  8. Pour in the chicken broth and coconut milk. Stir well and bring to a simmer.
  9. Simmer for 10-15 minutes, or until the sauce thickens.
  10. Remove the chicken from the oven and let it cool slightly. Slice into thin strips.
  11. Toast the bread slices and spread mayonnaise on each slice.
  12. Place lettuce leaves on two slices of bread.
  13. Top with the sliced katsu chicken and spoon the curry sauce over the chicken.
  14. Cover with the remaining bread slices to form sandwiches.
  15. Serve the katsu curry sandwiches warm and enjoy!
