Katsu Curry Sandwich
This delicious sandwich combines the flavors of crispy katsu chicken and flavorful curry sauce.
Ingredients - Serves 2
- Mayonnaise - 4 tablespoons
- Lettuce - 4 leaves
- Bread - 4 slices
- Soy sauce - 2 tablespoons
- Coconut milk - 1/2 cup
- Chicken broth - 1 cup
- Potato - 1, diced
- Carrot - 1, thinly sliced
- Onion - 1, thinly sliced
- Curry powder - 2 tablespoons
- Flour - 1/2 cup
- Egg - 1
- Panko breadcrumbs - 1 cup
- Chicken breast - 2 pieces
Let's Get Started
- Preheat the oven to 400°F.
- Season the chicken breasts with salt and pepper.
- Dip each chicken breast into flour, then beaten egg, and finally coat with panko breadcrumbs.
- Place the breaded chicken breasts on a baking sheet and bake for 20-25 minutes, or until golden and crispy.
- While the chicken is baking, prepare the curry sauce. Heat a tablespoon of oil in a saucepan over medium heat.
- Add the sliced onion, carrot, and diced potato. Cook until the vegetables are softened.
- Add the curry powder and cook for another minute.
- Pour in the chicken broth and coconut milk. Stir well and bring to a simmer.
- Simmer for 10-15 minutes, or until the sauce thickens.
- Remove the chicken from the oven and let it cool slightly. Slice into thin strips.
- Toast the bread slices and spread mayonnaise on each slice.
- Place lettuce leaves on two slices of bread.
- Top with the sliced katsu chicken and spoon the curry sauce over the chicken.
- Cover with the remaining bread slices to form sandwiches.
- Serve the katsu curry sandwiches warm and enjoy!
