  1. Season the chicken breasts with salt and black pepper.
  2. Dredge the chicken breasts in flour, dip them in beaten eggs, and coat them with panko breadcrumbs.
  3. Heat vegetable oil in a large skillet over medium heat.
  4. Fry the breaded chicken breasts until golden brown and cooked through, about 4-5 minutes per side. Remove from the skillet and set aside.
  5. In the same skillet, add the chopped onion, carrot, and minced garlic. Cook until the vegetables are softened.
  6. Add curry powder and garam masala to the skillet and cook for another minute.
  7. Pour in chicken broth, soy sauce, and honey. Stir well and bring to a simmer.
  8. Simmer the curry sauce for 10-15 minutes, until it thickens slightly.
  9. Slice the fried chicken breasts into strips.
