Ingredients - Serves 4

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onions, garlic, bell pepper, and tomatoes. Cook until the vegetables are soft, about 5 minutes.
  3. Add the chicken thighs to the pot and cook until browned on all sides.
  4. Add the rice to the pot and stir to coat in the oil and vegetables.
  5. Add the black beans, chicken broth, cilantro, salt, and pepper. Bring to a boil.
  6. Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the rice is cooked and the chicken is tender.
  7. Serve the Arroz Guacho hot, garnished with extra cilantro if desired.
