Arroz Guacho
Arroz Guacho is a traditional Panamanian dish, a hearty and delicious stew made with rice, beans, and meat.
Ingredients - Serves 4
- Salt and pepper - To taste
- Cilantro - 1/4 cup, chopped
- Chicken broth - 4 cups
- Black beans - 1 can, drained and rinsed
- Rice - 1 cup
- Chicken thighs - 4, boneless and skinless
- Tomatoes - 2, chopped
- Bell pepper - 1, chopped
- Garlic - 3 cloves, minced
- Onions - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onions, garlic, bell pepper, and tomatoes. Cook until the vegetables are soft, about 5 minutes.
- Add the chicken thighs to the pot and cook until browned on all sides.
- Add the rice to the pot and stir to coat in the oil and vegetables.
- Add the black beans, chicken broth, cilantro, salt, and pepper. Bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for 45 minutes, or until the rice is cooked and the chicken is tender.
- Serve the Arroz Guacho hot, garnished with extra cilantro if desired.
