Ingredients - Serves 4

Let's Get Started

  1. In a large pot, heat a bit of oil over medium heat. Add the curry paste and cook until fragrant.
  2. Add the chicken thighs to the pot and brown on all sides.
  3. Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir until well combined.
  4. Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through.
  5. While the soup is simmering, cook the egg noodles according to the package instructions.
  6. Once the chicken is cooked, remove it from the soup and shred it. Return the shredded chicken to the pot.
  7. To serve, divide the noodles among four bowls. Ladle the soup over the noodles, making sure each bowl gets an equal amount of chicken.
  8. Top each bowl with a squeeze of lime, a sprinkle of cilantro, some sliced red onion, a spoonful of pickled mustard greens, and a drizzle of chili oil. Enjoy!
