Kao Soi
Kao Soi is a rich and creamy, spicy and tangy coconut curry noodle soup hailing from Northern Thailand. It's a delicious blend of flavors and textures that's sure to warm you up on a cold day.
Ingredients - Serves 4
- Lime wedges, cilantro, red onion, pickled mustard greens, and chili oil - For serving
- Egg noodles - 1 package
- Brown sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Soy sauce - 2 tablespoons
- Red curry paste - 3 tablespoons
- Coconut milk - 2 cans
- Chicken thighs - 4, bone-in
Let's Get Started
- In a large pot, heat a bit of oil over medium heat. Add the curry paste and cook until fragrant.
- Add the chicken thighs to the pot and brown on all sides.
- Pour in the coconut milk, soy sauce, fish sauce, and brown sugar. Stir until well combined.
- Bring the mixture to a boil, then reduce the heat and let it simmer for about 30 minutes, or until the chicken is cooked through.
- While the soup is simmering, cook the egg noodles according to the package instructions.
- Once the chicken is cooked, remove it from the soup and shred it. Return the shredded chicken to the pot.
- To serve, divide the noodles among four bowls. Ladle the soup over the noodles, making sure each bowl gets an equal amount of chicken.
- Top each bowl with a squeeze of lime, a sprinkle of cilantro, some sliced red onion, a spoonful of pickled mustard greens, and a drizzle of chili oil. Enjoy!
