Kao Soi
Kao Soi is a traditional Thai curry noodle soup with rich flavors and textures.
Ingredients - Serves 4
- Crunchy noodles - For garnish
- Red onion - 1/4 cup, thinly sliced
- Cilantro - 1/4 cup, chopped
- Lime - 1, cut into wedges
- Egg noodles - 8 ounces
- Curry powder - 1 teaspoon
- Turmeric powder - 1 teaspoon
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Chicken broth - 2 cups
- Coconut milk - 2 cups
- Red curry paste - 2 tablespoons
- Chicken thighs - 4, bone-in
Let's Get Started
- In a large pot, heat some oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the pot and set aside.
- In the same pot, add the red curry paste and cook for a minute until fragrant.
- Pour in the coconut milk and chicken broth. Stir well to combine.
- Add the fish sauce, sugar, turmeric powder, and curry powder. Stir to incorporate the flavors.
- Return the chicken thighs to the pot and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through and tender.
- While the soup is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
- Once the chicken is cooked, remove it from the pot and shred the meat using two forks. Discard the bones.
- Return the shredded chicken to the pot and stir to combine.
- To serve, divide the cooked egg noodles among bowls. Ladle the soup over the noodles.
- Garnish with lime wedges, chopped cilantro, sliced red onion, and crunchy noodles.
