  1. In a large pot, heat some oil over medium heat. Add the chicken thighs and cook until browned on both sides. Remove from the pot and set aside.
  2. In the same pot, add the red curry paste and cook for a minute until fragrant.
  3. Pour in the coconut milk and chicken broth. Stir well to combine.
  4. Add the fish sauce, sugar, turmeric powder, and curry powder. Stir to incorporate the flavors.
  5. Return the chicken thighs to the pot and bring the mixture to a boil. Reduce the heat and let it simmer for 30 minutes, or until the chicken is cooked through and tender.
  6. While the soup is simmering, cook the egg noodles according to the package instructions. Drain and set aside.
  7. Once the chicken is cooked, remove it from the pot and shred the meat using two forks. Discard the bones.
  8. Return the shredded chicken to the pot and stir to combine.
  9. To serve, divide the cooked egg noodles among bowls. Ladle the soup over the noodles.
  10. Garnish with lime wedges, chopped cilantro, sliced red onion, and crunchy noodles.
