Kalakukko is a traditional Finnish fish pie made with rye crust and filled with fish and bacon.

Ingredients - Serves 6

Let's Get Started

  1. In a large bowl, combine the rye flour, softened butter, water, and salt. Mix until a dough forms.
  2. Knead the dough on a floured surface until smooth and elastic.
  3. Divide the dough into two equal portions.
  4. Roll out one portion of the dough into a large circle, about 1/4 inch thick.
  5. Place the rolled out dough in a greased round baking dish, covering the bottom and sides.
  6. Layer half of the bacon slices on the bottom of the dough.
  7. Add a layer of whitefish fillets on top of the bacon.
  8. Top the fish with sliced onions, salt, and pepper.
  9. Repeat the layers with the remaining bacon, fish, onions, salt, and pepper.
  10. Roll out the second portion of dough into a circle, slightly larger than the baking dish.
  11. Place the rolled out dough on top of the filling, sealing the edges with the bottom crust.
  12. Make a small hole in the center of the top crust to allow steam to escape.
  13. Bake in a preheated oven at 350°F for 3-4 hours, or until the crust is golden brown and the filling is cooked through.
  14. Allow the kalakukko to cool for a few minutes before slicing and serving.
