Kalakukko
Kalakukko is a traditional Finnish fish pie made with rye crust and filled with fish and bacon.
Ingredients - Serves 6
- Salt and pepper - To taste
- Onion - 1 large, thinly sliced
- Bacon - 8 slices
- Whitefish fillets - 1.5 pounds, boneless and skinless
- Salt - 1 teaspoon
- Water - 1 cup
- Butter - 1 cup, softened
- Rye flour - 4 cups
Let's Get Started
- In a large bowl, combine the rye flour, softened butter, water, and salt. Mix until a dough forms.
- Knead the dough on a floured surface until smooth and elastic.
- Divide the dough into two equal portions.
- Roll out one portion of the dough into a large circle, about 1/4 inch thick.
- Place the rolled out dough in a greased round baking dish, covering the bottom and sides.
- Layer half of the bacon slices on the bottom of the dough.
- Add a layer of whitefish fillets on top of the bacon.
- Top the fish with sliced onions, salt, and pepper.
- Repeat the layers with the remaining bacon, fish, onions, salt, and pepper.
- Roll out the second portion of dough into a circle, slightly larger than the baking dish.
- Place the rolled out dough on top of the filling, sealing the edges with the bottom crust.
- Make a small hole in the center of the top crust to allow steam to escape.
- Bake in a preheated oven at 350°F for 3-4 hours, or until the crust is golden brown and the filling is cooked through.
- Allow the kalakukko to cool for a few minutes before slicing and serving.
