Kalakeitto
Kalakeitto is a traditional Finnish fish soup made with fresh fish, potatoes, and vegetables.
Ingredients - Serves 6
- Heavy cream - 1/2 cup
- Salt and pepper - To taste
- Dill - 2 tablespoons, chopped
- Bay leaf - 1
- Fish stock - 4 cups
- Butter - 2 tablespoons
- Onion - 1, chopped
- Leek - 1, sliced
- Carrots - 2 medium, peeled and diced
- Potatoes - 4 medium, peeled and diced
- Fresh fish fillets - 500g
Let's Get Started
- In a large pot, melt the butter over medium heat.
- Add the chopped onion and sliced leek. Cook until softened, about 5 minutes.
- Add the diced potatoes, carrots, fish stock, and bay leaf to the pot. Bring to a boil, then reduce the heat and simmer for 15 minutes, or until the vegetables are tender.
- While the vegetables are cooking, cut the fish fillets into bite-sized pieces.
- Add the fish pieces to the pot and cook for an additional 5 minutes, or until the fish is cooked through.
- Stir in the chopped dill and season with salt and pepper to taste.
- Remove the bay leaf from the soup.
- Serve the kalakeitto hot, garnished with a drizzle of heavy cream.
