Jamaican Jerk Chicken
This Jamaican jerk chicken is a flavorful and spicy grilled chicken dish with a perfect blend of spices and seasonings.
Ingredients - Serves 4
- Vegetable oil - 2 tablespoons
- Black pepper - 1/2 teaspoon
- Salt - 1/2 teaspoon
- Cayenne pepper - 1/2 teaspoon
- Thyme - 1 teaspoon
- Allspice - 1 teaspoon
- Brown sugar - 2 tablespoons
- Lime juice - 2 tablespoons
- Soy sauce - 2 tablespoons
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Scallions - 4, chopped
- Chicken thighs - 4
Let's Get Started
- In a bowl, combine the scallions, garlic, ginger, soy sauce, lime juice, brown sugar, allspice, thyme, cayenne pepper, salt, black pepper, and vegetable oil to make the jerk marinade.
- Place the chicken thighs in a ziplock bag and pour the jerk marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
- Preheat the grill to medium-high heat.
- Remove the chicken thighs from the marinade and discard the excess marinade.
- Grill the chicken thighs for about 6-8 minutes per side, or until cooked through and nicely charred.
- Remove from the grill and let the chicken rest for a few minutes before serving.
- Serve the Jamaican jerk chicken with rice and beans, grilled vegetables, or a fresh salad.
