  1. In a bowl, combine the scallions, garlic, ginger, soy sauce, lime juice, brown sugar, allspice, thyme, cayenne pepper, salt, black pepper, and vegetable oil to make the jerk marinade.
  2. Place the chicken thighs in a ziplock bag and pour the jerk marinade over them. Seal the bag and massage the marinade into the chicken. Let it marinate in the refrigerator for at least 2 hours, or overnight for best results.
  3. Preheat the grill to medium-high heat.
  4. Remove the chicken thighs from the marinade and discard the excess marinade.
  5. Grill the chicken thighs for about 6-8 minutes per side, or until cooked through and nicely charred.
  6. Remove from the grill and let the chicken rest for a few minutes before serving.
  7. Serve the Jamaican jerk chicken with rice and beans, grilled vegetables, or a fresh salad.
