Istarska Jota
Istarska Jota is a traditional Istrian stew made with sauerkraut, beans, and smoked meat.
Ingredients - Serves 6
- Water - 1 liter
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Bay leaves - 2
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Potatoes - 4 medium, peeled and diced
- Smoked pork ribs - 500 grams
- Dried beans - 250 grams
- Sauerkraut - 500 grams
Let's Get Started
- Rinse the sauerkraut and beans under cold water.
- In a large pot, heat the olive oil over medium heat.
- Add the chopped onion and minced garlic. Sauté until the onion is translucent.
- Add the smoked pork ribs and cook until browned on all sides.
- Add the sauerkraut, beans, diced potatoes, bay leaves, paprika, salt, and pepper. Stir well to combine.
- Pour in the water and bring to a boil.
- Reduce the heat to low, cover the pot, and simmer for about 2 hours, or until the beans are tender and the flavors have melded together.
- Remove the bay leaves before serving.
- Serve hot and enjoy!
