Iron Eggs
Iron eggs are a popular snack in Taiwan, known for their chewy texture. They are made by repeatedly braising and air-drying chicken eggs.
Ingredients - Serves 4
- Sugar - 1/4 cup
- Cinnamon stick - 1
- Star anise - 2
- Black tea leaves - 1 tablespoon
- Soy sauce - 1 cup
- Chicken eggs - 12
Let's Get Started
- Boil the eggs for 10 minutes, then cool and peel them.
- In a pot, combine the soy sauce, tea leaves, star anise, cinnamon stick, and sugar. Add the eggs and enough water to cover them.
- Bring the mixture to a boil, then reduce the heat and simmer for 2 hours.
- Remove the eggs from the pot and let them air-dry.
- Repeat the braising and drying process several times until the eggs are dark and chewy.
