  2. In a pot, combine the soy sauce, tea leaves, star anise, cinnamon stick, and sugar. Add the eggs and enough water to cover them.
  3. Bring the mixture to a boil, then reduce the heat and simmer for 2 hours.
  4. Remove the eggs from the pot and let them air-dry.
  5. Repeat the braising and drying process several times until the eggs are dark and chewy.
