- Heavy cream - For brushing
- Vanilla extract - 1 teaspoon
- Egg - 1 large
- Irish cream liqueur - 3/4 cup
- Unsalted butter - 1/2 cup, cold and cut into pieces
- Salt - 1/2 teaspoon
- Baking powder - 1 tablespoon
- Sugar - 1/4 cup
- All-purpose flour - 2 cups
Let's Get Started
- Preheat your oven to 425°F (220°C).
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Add the cold butter to the flour mixture. Use your fingers to rub the butter into the flour until the mixture resembles coarse crumbs.
- In a separate bowl, whisk together the Irish cream, egg, and vanilla extract.
- Pour the wet ingredients into the flour mixture. Stir until just combined.
- Turn the dough out onto a lightly floured surface. Knead it a few times to bring it together, then pat it into a round disc about 1 inch thick.
- Cut the dough into 8 wedges and place them on a baking sheet lined with parchment paper.
- Brush the tops of the scones with heavy cream and sprinkle with sugar.
- Bake for 15 minutes, or until the scones are golden brown.
- Let the scones cool on the baking sheet for a few minutes, then transfer them to a wire rack to cool further. Serve warm or at room temperature.
