Irio
Irio is a traditional Kenyan dish made with mashed potatoes, peas, corn, and greens.
Ingredients - Serves 4
- Salt and pepper - To taste
- Butter - 2 tablespoons
- Garlic - 2 cloves, minced
- Onion - 1 medium, chopped
- Greens (e.g., kale, spinach) - 2 cups, chopped
- Corn kernels - 1 cup
- Green peas - 1 cup
- Potatoes - 4 large, peeled and diced
Let's Get Started
- Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes.
- In a separate pot, cook the green peas and corn kernels until tender, about 5 minutes.
- In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.
- Add the chopped greens to the skillet and cook until wilted.
- Drain the cooked potatoes and mash them with a potato masher or fork.
- Add the cooked peas, corn, greens, onion, and garlic to the mashed potatoes. Mix well.
- Season with salt and pepper to taste.
