Ingredients - Serves 4

Let's Get Started

  1. Boil the diced potatoes in a large pot of salted water until tender, about 15 minutes.
  2. In a separate pot, cook the green peas and corn kernels until tender, about 5 minutes.
  3. In a skillet, melt the butter over medium heat. Add the chopped onion and minced garlic, and cook until softened.
  4. Add the chopped greens to the skillet and cook until wilted.
  5. Drain the cooked potatoes and mash them with a potato masher or fork.
  6. Add the cooked peas, corn, greens, onion, and garlic to the mashed potatoes. Mix well.
  7. Season with salt and pepper to taste.
  8. Serve hot as a side dish with your favorite main course.
