Intestine & Oyster Vermicelli
A traditional Taiwanese street food dish, Intestine & Oyster Vermicelli is a flavorful and hearty soup featuring chewy vermicelli noodles, tender pork intestine, and fresh oysters.
Ingredients - Serves 4
- Cilantro - For garnish
- Cornstarch - 1 tablespoon, mixed with 2 tablespoons water
- Chicken broth - 4 cups
- White pepper - 1/2 teaspoon
- Rice wine - 1 tablespoon
- Soy sauce - 2 tablespoons
- Ginger - 1 inch piece, minced
- Garlic - 3 cloves, minced
- Vermicelli noodles - 200 grams
- Fresh oysters - 200 grams
- Pork intestine - 200 grams, cleaned and sliced
Let's Get Started
- Soak the vermicelli noodles in warm water for 15 minutes, then drain and set aside.
- In a large pot, heat some oil over medium heat. Add the garlic and ginger and sauté until fragrant.
- Add the pork intestine and cook until browned. Add the soy sauce, rice wine, and white pepper and stir well.
- Add the chicken broth and bring to a boil. Reduce the heat and simmer for 30 minutes.
- Add the oysters and cook for another 5 minutes.
- Stir in the cornstarch mixture and cook until the soup thickens.
- Add the vermicelli noodles and cook for another 5 minutes, or until the noodles are tender.
- Serve hot, garnished with cilantro.
