Spiced Lentil and Paneer Wraps

Ingredients - Serves 4

Let's Get Started

  1. Rinse the lentils and cook them according to package instructions. Drain and set aside.
  2. Heat some oil in a pan and add the chopped onion. Cook until translucent.
  3. Add the minced garlic and grated ginger to the pan. Cook for another minute.
  4. Add the cooked lentils, turmeric powder, cumin powder, coriander powder, chili powder, and salt to the pan. Mix well and cook for 5 minutes.
  5. Add the cubed paneer cheese to the pan and cook for another 2-3 minutes, until the paneer is heated through.
  6. Remove from heat and stir in the lemon juice.
  7. Warm the tortilla wraps in a dry pan or microwave.
  8. Place a lettuce leaf on each tortilla wrap. Spoon the lentil and paneer mixture onto the lettuce.
  9. Top with sliced tomatoes, cucumbers, yogurt, and chopped mint leaves.
  10. Roll up the wraps tightly and serve.
