Spiced Lentil and Paneer Wraps
These flavorful wraps are filled with spiced lentils, paneer cheese, and fresh vegetables.
Ingredients - Serves 4
- Mint leaves - Handful, chopped
- Yogurt - 1/2 cup
- Cucumber - 1, sliced
- Tomato - 1, sliced
- Lettuce - 4 leaves
- Tortilla wraps - 4
- Lemon juice - 1 tablespoon
- Salt - To taste
- Chili powder - 1/4 teaspoon
- Coriander powder - 1/2 teaspoon
- Cumin powder - 1/2 teaspoon
- Turmeric powder - 1/2 teaspoon
- Ginger - 1 teaspoon, grated
- Garlic - 2 cloves, minced
- Onion - 1, finely chopped
- Paneer cheese - 200g, cubed
- Red lentils - 1 cup
Let's Get Started
- Rinse the lentils and cook them according to package instructions. Drain and set aside.
- Heat some oil in a pan and add the chopped onion. Cook until translucent.
- Add the minced garlic and grated ginger to the pan. Cook for another minute.
- Add the cooked lentils, turmeric powder, cumin powder, coriander powder, chili powder, and salt to the pan. Mix well and cook for 5 minutes.
- Add the cubed paneer cheese to the pan and cook for another 2-3 minutes, until the paneer is heated through.
- Remove from heat and stir in the lemon juice.
- Warm the tortilla wraps in a dry pan or microwave.
- Place a lettuce leaf on each tortilla wrap. Spoon the lentil and paneer mixture onto the lettuce.
- Top with sliced tomatoes, cucumbers, yogurt, and chopped mint leaves.
- Roll up the wraps tightly and serve.
