Indian Palak Paneer with Mushrooms
This flavorful Indian dish combines spinach (palak) with paneer cheese and mushrooms, cooked in a rich and aromatic sauce.
Ingredients - Serves 4
- Fresh cilantro - For garnish
- Fresh cream - 2 tablespoons
- Oil - 2 tablespoons
- Salt - To taste
- Garam masala - 1/2 teaspoon
- Coriander powder - 1 teaspoon
- Turmeric powder - 1/2 teaspoon
- Cumin seeds - 1 teaspoon
- Green chili - 1, finely chopped
- Tomato - 2 medium, chopped
- Ginger - 1-inch piece, grated
- Garlic - 3 cloves, minced
- Onion - 1 large, finely chopped
- Mushrooms - 200 grams, sliced
- Paneer cheese - 200 grams, cubed
- Spinach - 500 grams
Let's Get Started
- Blanch the spinach in boiling water for 2 minutes. Drain and transfer to a blender. Blend until smooth to make spinach puree.
- Heat oil in a pan over medium heat. Add cumin seeds and let them splutter.
- Add chopped onion and sauté until golden brown.
- Add minced garlic, grated ginger, and chopped green chili. Sauté for another minute.
- Add chopped tomatoes and cook until they turn soft and mushy.
- Add turmeric powder, coriander powder, and garam masala. Mix well.
- Add sliced mushrooms and cook for 5 minutes, until they release their moisture.
- Add the spinach puree and mix well. Cook for 5 minutes.
- Add cubed paneer cheese and salt. Stir gently to combine.
- Cover the pan and simmer for 10 minutes, allowing the flavors to meld together.
- Stir in fresh cream and cook for another 2 minutes.
- Garnish with fresh cilantro and serve hot with rice or naan bread.
