Huushuur Soup
Huushuur soup is a traditional Mongolian dish made with ground meat, vegetables, and noodles in a flavorful broth.
Ingredients - Serves 6
- Cilantro - 1/4 cup, chopped
- Green onions - 2 stalks, chopped
- Salt and pepper - To taste
- Egg noodles - 8 ounces
- Beef broth - 6 cups
- Soy sauce - 2 tablespoons
- Ginger - 1 teaspoon, grated
- Garlic - 3 cloves, minced
- Potatoes - 2 medium, diced
- Carrots - 2 medium, diced
- Onion - 1 large, finely chopped
- Ground beef - 1 pound
Let's Get Started
- In a large pot, brown the ground beef over medium heat.
- Add the chopped onion, carrots, potatoes, garlic, and ginger. Cook until the vegetables are slightly softened, about 5 minutes.
- Stir in the soy sauce and beef broth. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Meanwhile, cook the egg noodles according to package instructions. Drain and set aside.
- Season the soup with salt and pepper to taste.
- To serve, divide the cooked egg noodles among bowls and ladle the hot soup over them.
- Garnish with chopped green onions and cilantro.
