  1. Heat 2 tablespoons of olive oil in a large frying pan over medium heat.
  2. Add the potatoes and cook until golden and crispy, about 15 minutes. Remove from the pan and set aside.
  3. In the same pan, add the chorizo and cook until browned, about 5 minutes.
  4. Push the chorizo to one side of the pan and crack the eggs into the other side. Cook until the whites are set but the yolks are still runny, about 3 minutes.
  5. Return the potatoes to the pan and mix everything together, breaking the egg yolks and letting them mix with the other ingredients.
  6. Season with salt and pepper to taste and serve immediately.
