- Chorizo - 200 grams, sliced

Let's Get Started
- Heat 2 tablespoons of olive oil in a large frying pan over medium heat.
- Add the potatoes and cook until golden and crispy, about 15 minutes. Remove from the pan and set aside.
- In the same pan, add the chorizo and cook until browned, about 5 minutes.
- Push the chorizo to one side of the pan and crack the eggs into the other side. Cook until the whites are set but the yolks are still runny, about 3 minutes.
- Return the potatoes to the pan and mix everything together, breaking the egg yolks and letting them mix with the other ingredients.
- Season with salt and pepper to taste and serve immediately.
