Ingredients - Serves 2

Let's Get Started

  1. Heat 2 tablespoons of olive oil in a large skillet over medium heat.
  2. Add the sliced potatoes and cook until golden brown and crispy, about 10 minutes. Season with salt and pepper.
  3. Remove the potatoes from the skillet and set aside.
  4. In the same skillet, add the remaining 2 tablespoons of olive oil.
  5. Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
  6. Place the fried potatoes on a serving plate.
  7. Top the potatoes with the fried eggs and sliced cured ham.
  8. Garnish with parsley and season with additional salt and pepper if desired.
  9. Serve immediately and enjoy!
