Huevos Rotos
Huevos Rotos, or broken eggs, is a traditional Spanish dish made with fried potatoes, eggs, and cured ham.
Ingredients - Serves 2
- Parsley - For garnish
- Black pepper - To taste
- Salt - To taste
- Cured ham - 100g, thinly sliced
- Eggs - 4
- Olive oil - 4 tablespoons
- Potatoes - 2 large, peeled and thinly sliced
Let's Get Started
- Heat 2 tablespoons of olive oil in a large skillet over medium heat.
- Add the sliced potatoes and cook until golden brown and crispy, about 10 minutes. Season with salt and pepper.
- Remove the potatoes from the skillet and set aside.
- In the same skillet, add the remaining 2 tablespoons of olive oil.
- Crack the eggs into the skillet and cook until the whites are set but the yolks are still runny, about 3-4 minutes.
- Place the fried potatoes on a serving plate.
- Top the potatoes with the fried eggs and sliced cured ham.
- Garnish with parsley and season with additional salt and pepper if desired.
- Serve immediately and enjoy!
