Huevos Rellenos
Huevos Rellenos, or Deviled Eggs, is a classic Spanish tapas dish. Hard-boiled eggs are filled with a creamy mixture of the yolks, mayonnaise, and spices.

- Chives - 1 tablespoon, finely chopped
- Paprika - 1/2 teaspoon
- Salt and pepper - To taste
- Mustard - 1 tablespoon
- Mayonnaise - 4 tablespoons
- Eggs - 8
Let's Get Started
- Place the eggs in a pot of cold water. Bring the water to a boil, then reduce the heat and simmer for 10 minutes.
- Drain the eggs and let them cool. Once they are cool, peel the eggs.
- Cut the eggs in half lengthwise. Remove the yolks and place them in a bowl.
- Add the mayonnaise, mustard, salt, pepper, and paprika to the yolks. Mash everything together until smooth.
- Spoon the yolk mixture back into the egg whites.
- Sprinkle the eggs with the chopped chives and serve.
