Huevos a La Flamenca
Huevos a la Flamenca is a traditional Spanish dish made with eggs, vegetables, and cured meats.

- Fresh parsley - 2 tablespoons, chopped
- Eggs - 4
- Salt and pepper - To taste
- Paprika - 1 teaspoon
- Peas - 1 cup
- Tomatoes - 4, diced
- Chorizo - 150g, sliced
- Garlic - 2 cloves, minced
- Red bell pepper - 1, diced
- Onion - 1, diced
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large skillet over medium heat.
- Add the onion, red bell pepper, and garlic. Cook until the vegetables are softened, about 5 minutes.
- Add the chorizo and cook until browned, about 5 minutes.
- Add the diced tomatoes, peas, paprika, salt, and pepper. Cook for another 5 minutes.
- Make 4 wells in the mixture and crack an egg into each well.
- Cover the skillet and cook until the eggs are cooked to your liking, about 5-7 minutes for medium eggs.
- Sprinkle with fresh parsley before serving.
