House Made Gnocchi
Delicious, pillowy homemade gnocchi made from potatoes and flour, served with a savory tomato sauce.
Ingredients - Serves 4
- Fresh basil - A handful, chopped
- Parmesan cheese - 1/2 cup, grated
- Tomato sauce - 2 cups
- Salt - 1 teaspoon
- Egg - 1
- All-purpose flour - 1.5 cups
- Potatoes - 2 large
Let's Get Started
- Boil the potatoes until they are soft, about 20 minutes. Drain and let cool.
- Once the potatoes are cool enough to handle, peel them and pass them through a potato ricer into a large bowl.
- Add the flour, egg, and salt to the bowl and mix until a dough forms.
- Turn the dough out onto a floured surface and knead it a few times to bring it together.
- Divide the dough into 4 pieces. Roll each piece into a long rope, about 1 inch in diameter.
- Cut each rope into 1-inch pieces to form the gnocchi.
- Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2 minutes.
- Drain the gnocchi and toss them with the tomato sauce.
- Serve the gnocchi topped with the grated Parmesan and chopped basil.
