Ingredients - Serves 4

Let's Get Started

  1. Boil the potatoes until they are soft, about 20 minutes. Drain and let cool.
  2. Once the potatoes are cool enough to handle, peel them and pass them through a potato ricer into a large bowl.
  3. Add the flour, egg, and salt to the bowl and mix until a dough forms.
  4. Turn the dough out onto a floured surface and knead it a few times to bring it together.
  5. Divide the dough into 4 pieces. Roll each piece into a long rope, about 1 inch in diameter.
  6. Cut each rope into 1-inch pieces to form the gnocchi.
  7. Bring a large pot of salted water to a boil. Add the gnocchi and cook until they float to the surface, about 2 minutes.
  8. Drain the gnocchi and toss them with the tomato sauce.
  9. Serve the gnocchi topped with the grated Parmesan and chopped basil.
