Zucchine Ripiene
Zucchine Ripiene, or stuffed zucchini, is a classic Italian dish filled with a flavorful mixture of breadcrumbs, cheese, and herbs.
Ingredients - Serves 4
- Salt and pepper - To taste
- Egg - 1, beaten
- Fresh parsley - 2 tablespoons, chopped
- Fresh basil - 2 tablespoons, chopped
- Parmesan cheese - 1/2 cup, grated
- Breadcrumbs - 1 cup
- Garlic - 2 cloves, minced
- Onion - 1 small, finely chopped
- Olive oil - 2 tablespoons
- Zucchini - 4 medium
Let's Get Started
- Preheat the oven to 350°F (175°C).
- Cut the zucchini in half lengthwise and scoop out the pulp, leaving a shell about 1/4 inch thick.
- Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until soft.
- In a bowl, combine the cooked onion and garlic, zucchini pulp, breadcrumbs, Parmesan cheese, basil, parsley, and egg. Season with salt and pepper.
- Stuff the zucchini shells with the mixture and place on a baking sheet.
- Bake for 30 minutes, or until the zucchini is tender and the filling is golden.
