  1. Preheat the oven to 350°F (175°C).
  2. Cut the zucchini in half lengthwise and scoop out the pulp, leaving a shell about 1/4 inch thick.
  3. Heat the olive oil in a skillet over medium heat. Add the onion and garlic and cook until soft.
  4. In a bowl, combine the cooked onion and garlic, zucchini pulp, breadcrumbs, Parmesan cheese, basil, parsley, and egg. Season with salt and pepper.
  5. Stuff the zucchini shells with the mixture and place on a baking sheet.
  6. Bake for 30 minutes, or until the zucchini is tender and the filling is golden.
