Homemade Ramen
This homemade ramen recipe is made with a savory broth, fresh veggies, and tender noodles.
Ingredients - Serves 4
- Soft boiled eggs - 4
- Green onions - 4, thinly sliced
- Ramen noodles - 12 ounces
- Bok choy - 2 heads, chopped
- Carrots - 2, peeled and sliced
- Shiitake mushrooms - 4 ounces, sliced
- Ginger - 1 tablespoon, grated
- Garlic - 4 cloves, minced
- Brown sugar - 2 tablespoons
- Sake - 1/4 cup
- Mirin - 1/4 cup
- Soy sauce - 1/4 cup
- Chicken broth - 6 cups
Let's Get Started
- In a large pot, combine the chicken broth, soy sauce, mirin, sake, brown sugar, garlic, and ginger. Bring to a boil, then reduce the heat and simmer for 30 minutes.
- Strain the broth and return it to the pot. Add the shiitake mushrooms, carrots, and bok choy. Simmer for 10 minutes, or until the veggies are tender.
- Cook the ramen noodles according to package instructions.
- Divide the noodles among four bowls. Ladle the broth and veggies over the noodles.
- Top each bowl with sliced green onions and a soft boiled egg.
