Hobakjuk
Hobakjuk is a traditional Korean porridge made with pumpkin, sweet rice, and cinnamon. It is a comforting and nutritious dish often enjoyed as a dessert or snack.
Ingredients - Serves 4
- Pine nuts - 2 tablespoons, for garnish
- Salt - 1/4 teaspoon
- Cinnamon powder - 1/2 teaspoon
- Sugar - 3 tablespoons
- Water - 4 cups
- Sweet rice - 1/2 cup
- Pumpkin - 1 small, peeled and diced
Let's Get Started
- Rinse the sweet rice under cold water until the water runs clear.
- In a large pot, combine the sweet rice, water, and diced pumpkin. Bring to a boil over medium heat.
- Reduce the heat to low and simmer for about 20 minutes, or until the pumpkin and rice are soft and cooked through.
- Using an immersion blender or a regular blender, puree the mixture until smooth and creamy.
- Return the mixture to the pot and add the sugar, cinnamon powder, and salt. Stir well to combine.
- Simmer for another 5-10 minutes, stirring occasionally, until the porridge thickens to your desired consistency.
- Remove from heat and let it cool slightly before serving.
- Serve the hobakjuk warm, garnished with pine nuts on top.
