Blue Corn Pancakes with Pine Nut Butter

Ingredients - Serves 4
- Honey - 2 tablespoons
- Pine nuts - 1/2 cup
- Butter - 2 tablespoons, melted
- Eggs - 2
- Milk - 1 1/2 cups
- Salt - 1/2 teaspoon
- Baking powder - 1 teaspoon
- Sugar - 2 tablespoons
- All-purpose flour - 1 cup
- Blue cornmeal - 1 cup
Let's Get Started
- In a large bowl, combine the blue cornmeal, flour, sugar, baking powder, and salt.
- In a separate bowl, whisk together the milk, eggs, and melted butter. Gradually add this to the dry ingredients, stirring until just combined.
