Torta Della Nonna

Ingredients - Serves 8
- Pine nuts - 1/2 cup
- Lemon zest - 1 tablespoon
- Vanilla extract - 1 teaspoon

- Egg yolks - 6
- Sugar - 3/4 cup
- Milk - 2 cups
- For the custard filling -

- Butter - 1 cup, cold and cut into cubes
- Sugar - 1 cup
- All-purpose flour - 3 cups
- For the pastry -
Let's Get Started
- In a large bowl, combine the flour and sugar for the pastry. Add the butter and mix until it resembles coarse crumbs. Add the eggs and lemon zest and mix until a dough forms. Divide the dough in half, wrap in plastic wrap, and refrigerate for 30 minutes.
- In a saucepan, combine the milk, sugar, egg yolks, flour, vanilla extract, and lemon zest for the custard filling. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and let cool.
- Preheat the oven to 350°F (175°C). Roll out one half of the dough and fit it into a tart pan. Pour the custard filling into the tart shell. Roll out the other half of the dough and place it over the filling. Sprinkle the pine nuts over the top.
- Bake for 40-45 minutes, or until the tart is golden brown. Let cool before serving.
