Carquinyolis
Carquinyolis are a traditional Catalan biscuit made of almonds, flour, sugar, eggs and pine nuts. They are crunchy and perfect to pair with a cup of coffee or tea.
Ingredients - Serves 6
- Salt - 1/4 teaspoon
- Baking powder - 1 teaspoon
- Pine nuts - 1/2 cup
- Almonds - 1 cup, toasted
- Eggs - 2
- Sugar - 1 cup
- Flour - 2 cups
Let's Get Started
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the flour, sugar, baking powder, and salt.
- Beat in the eggs until the dough comes together.
- Fold in the toasted almonds and pine nuts.
- On a floured surface, shape the dough into a log and place it on a baking sheet lined with parchment paper.
- Bake for 30 minutes, or until the log is golden brown.
- Remove the log from the oven and let it cool for a few minutes. Then, slice it into 1/2-inch thick slices.
- Place the slices back on the baking sheet and bake for another 10 minutes, or until they are golden and crispy.
- Let the carquinyolis cool before serving.
