Herb Roasted Root Vegetables

Ingredients - Serves 4
- Salt and pepper - To taste
- Thyme - 1 tablespoon, fresh and chopped
- Rosemary - 1 tablespoon, fresh and chopped
- Olive oil - 2 tablespoons
- Red potatoes - 2 medium, cut into chunks
- Parsnips - 2 large, peeled and cut into chunks
- Carrots - 4 medium, peeled and cut into chunks
Let's Get Started
- Preheat your oven to 400°F (200°C).
- Place the carrots, parsnips, and potatoes in a large bowl.
- Drizzle the vegetables with olive oil and sprinkle with rosemary, thyme, salt, and pepper. Toss until the vegetables are well coated.
- Spread the vegetables out in a single layer on a large baking sheet.
- Roast in the preheated oven for 45 minutes, or until the vegetables are tender and golden brown, stirring occasionally.
- Serve the vegetables hot, garnished with additional fresh herbs if desired.
