Let's Get Started

  1. Season the beef ribs with salt and pepper.
  2. Heat the olive oil in a large Dutch oven over medium-high heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
  3. In the same pot, add the onion and garlic and cook until softened.
  4. Add the red wine to the pot and scrape up any browned bits from the bottom.
  5. Stir in the tomato paste, rosemary, and thyme.
  6. Return the ribs to the pot and add the beef broth. The broth should almost cover the ribs.
  7. Cover the pot and reduce the heat to low. Simmer for about 3 hours, or until the ribs are tender.
  8. Serve the ribs with the braising liquid.
