Mediterranean Style Braised Beef Ribs
These Mediterranean-style braised beef ribs are slow-cooked with red wine, garlic, and herbs until they're fall-off-the-bone tender. The perfect comfort food for a cozy dinner.
Ingredients - Serves 4
- Beef broth - 2 cups
- Thyme - 1 tablespoon, fresh or dried
- Rosemary - 1 tablespoon, fresh or dried
- Tomato paste - 2 tablespoons
- Red wine - 1 cup
- Garlic - 4 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Beef ribs - 2 pounds
Let's Get Started
- Season the beef ribs with salt and pepper.
- Heat the olive oil in a large Dutch oven over medium-high heat. Add the ribs and brown on all sides. Remove the ribs and set aside.
- In the same pot, add the onion and garlic and cook until softened.
- Add the red wine to the pot and scrape up any browned bits from the bottom.
- Stir in the tomato paste, rosemary, and thyme.
- Return the ribs to the pot and add the beef broth. The broth should almost cover the ribs.
- Cover the pot and reduce the heat to low. Simmer for about 3 hours, or until the ribs are tender.
- Serve the ribs with the braising liquid.
