- Lime wedges - 4
- Cilantro - 1/4 cup, chopped
- Scallions - 2, thinly sliced
- Chicken broth - 4 cups
- Sugar - 1 tablespoon
- Fish sauce - 2 tablespoons
- Garlic - 3 cloves, minced
- Shallots - 3, minced
- Ginger - 1 thumb-sized piece, minced
- Lemongrass - 2 stalks, minced
- Rice crackers (banh da) - 200 grams
- Baby clams - 500 grams
Let's Get Started
- In a large pot, heat some oil over medium heat.
- Add the lemongrass, ginger, shallots, and garlic. Sauté until fragrant.
- Add the baby clams and cook until they open up.
- Remove the clams from the pot and set aside.
- In the same pot, add the chicken broth, fish sauce, and sugar. Bring to a boil.
- Add the rice crackers and cook for a few minutes until they soften.
- Return the clams to the pot and simmer for another 5 minutes.
- Serve the Hen Xuc Banh Da in bowls, garnished with scallions and cilantro.
- Serve with lime wedges on the side.
