  1. Preheat the oven to 400°F.
  2. Season the salmon fillets with salt and pepper, then press the hemp seeds onto the top of each fillet to form a crust.
  3. Heat the olive oil in a large oven-safe skillet over medium heat. Add the salmon, hemp seed side down, and cook for 3-4 minutes, until the seeds are golden.
  4. Flip the salmon and transfer the skillet to the oven. Bake for 10-12 minutes, until the salmon is cooked through.
