Harira
Harira is a traditional Moroccan soup of tomato, lentils, and chickpeas. It's commonly eaten to break the fast during Ramadan.
Ingredients - Serves 6
- Fresh cilantro - 1/4 cup, chopped
- Lemon - 1, juiced
- Chicken broth - 6 cups
- Chickpeas - 1 can, drained and rinsed
- Lentils - 1 cup
- Cayenne pepper - 1/2 teaspoon
- Ground ginger - 1 teaspoon
- Ground cinnamon - 1 teaspoon
- Ground turmeric - 1 teaspoon
- Garlic - 2 cloves, minced
- Tomatoes - 2 large, diced
- Celery - 2 stalks, chopped
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, celery, tomatoes, and garlic. Cook until the vegetables are soft, about 10 minutes.
- Stir in the turmeric, cinnamon, ginger, and cayenne pepper. Cook for 1 minute.
- Add the lentils, chickpeas, and chicken broth. Bring to a boil, then reduce the heat and simmer for 45 minutes.
- Stir in the lemon juice and cilantro. Cook for 5 more minutes.
- Serve hot.
