Ingredients - Serves 6

Let's Get Started

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion, garlic, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
  3. Add the lentils, chickpeas, tomatoes, tomato paste, cilantro, parsley, turmeric, cumin, cinnamon, salt, and pepper. Stir to combine.
  4. Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the lentils are tender.
  5. Stir in the lemon juice and adjust the seasoning if needed.
  6. Serve hot and enjoy!
