Harira
Harira is a traditional Moroccan soup made with lentils, chickpeas, tomatoes, and spices. It is often served during Ramadan.
Ingredients - Serves 6
- Water - 4 cups
- Lemon - 1, juiced
- Salt and pepper - To taste
- Cinnamon - 1/2 teaspoon
- Cumin - 1 teaspoon
- Turmeric - 1 teaspoon
- Parsley - 1/4 cup, chopped
- Cilantro - 1/4 cup, chopped
- Tomato paste - 2 tablespoons
- Tomatoes - 1 can, diced
- Chickpeas - 1 can, drained and rinsed
- Red lentils - 1 cup
- Carrot - 2, diced
- Celery - 2 stalks, diced
- Garlic - 3 cloves, minced
- Onion - 1, finely chopped
- Olive oil - 2 tablespoons
Let's Get Started
- Heat the olive oil in a large pot over medium heat.
- Add the onion, garlic, celery, and carrot. Cook until the vegetables are softened, about 5 minutes.
- Add the lentils, chickpeas, tomatoes, tomato paste, cilantro, parsley, turmeric, cumin, cinnamon, salt, and pepper. Stir to combine.
- Pour in the water and bring to a boil. Reduce the heat and simmer for 45 minutes, or until the lentils are tender.
- Stir in the lemon juice and adjust the seasoning if needed.
- Serve hot and enjoy!
