Let's Get Started

  1. In a small bowl, dissolve the yeast and sugar in the warm water. Let sit for 10 minutes until frothy.
  2. In a large bowl, combine the flour and baking powder. Make a well in the center and add the yeast mixture and lard. Mix until a dough forms.
  3. Knead the dough on a floured surface for about 10 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise for 2 hours.
  4. Meanwhile, in a small saucepan, combine the char siu, hoisin sauce, soy sauce, cornstarch, and water. Cook over medium heat until thickened.
  5. Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and flatten with a rolling pin.
  6. Place a spoonful of the pork mixture in the center of each dough circle. Gather the edges and pinch to seal.
  7. Place the buns on a piece of parchment paper in a steamer. Cover and let rise for 30 minutes.
  8. Steam the buns over high heat for 15 minutes. Serve hot.
