Char Siu Bao
Delicious and fluffy steamed buns filled with savory barbecued pork.
Ingredients - Serves 12
- Water - 1/4 cup
- Cornstarch - 1 tablespoon
- Soy sauce - 1 tablespoon
- Hoisin sauce - 2 tablespoons
- Char siu (chinese bbq pork) - 1 cup, chopped
- Lard - 2 tablespoons
- Baking powder - 1/2 teaspoon
- All-purpose flour - 2 cups
- Warm water - 1/2 cup
- Sugar - 1/4 cup
- Active dry yeast - 1 tablespoon
Let's Get Started
- In a small bowl, dissolve the yeast and sugar in the warm water. Let sit for 10 minutes until frothy.
- In a large bowl, combine the flour and baking powder. Make a well in the center and add the yeast mixture and lard. Mix until a dough forms.
- Knead the dough on a floured surface for about 10 minutes, until smooth and elastic. Place in a greased bowl, cover, and let rise for 2 hours.
- Meanwhile, in a small saucepan, combine the char siu, hoisin sauce, soy sauce, cornstarch, and water. Cook over medium heat until thickened.
- Punch down the dough and divide into 12 equal pieces. Roll each piece into a ball and flatten with a rolling pin.
- Place a spoonful of the pork mixture in the center of each dough circle. Gather the edges and pinch to seal.
- Place the buns on a piece of parchment paper in a steamer. Cover and let rise for 30 minutes.
- Steam the buns over high heat for 15 minutes. Serve hot.
