Hai Green Curry Linguine
A fusion of Italian and Thai cuisine, this Thai Green Curry Linguine is a creamy, spicy and flavorful dish.
Ingredients - Serves 4
- Fresh basil leaves - A handful
- Lime - 1, juiced
- Brown sugar - 1 tablespoon
- Fish sauce - 1 tablespoon
- Garlic - 2 cloves, minced
- Snow peas - 1 cup
- Red bell pepper - 1, thinly sliced
- Chicken breast - 2, thinly sliced
- Coconut milk - 1 can
- Green curry paste - 2 tablespoons
- Linguine - 400 grams
Let's Get Started
- Cook the linguine according to the package instructions, then drain and set aside.
- Heat a large pan over medium heat and add the green curry paste. Cook for 1-2 minutes until fragrant.
- Add the coconut milk to the pan and stir until well combined with the curry paste.
- Add the chicken to the pan and cook until no longer pink.
- Add the red bell pepper and snow peas to the pan and cook for a further 2-3 minutes.
- Stir in the garlic, fish sauce, brown sugar, and lime juice. Cook for another 2 minutes.
- Add the cooked linguine to the pan and toss until well coated in the curry sauce.
- Serve the linguine topped with fresh basil leaves.
