Goi Cuon
Goi Cuon, also known as Vietnamese Spring Rolls, are fresh, light, and packed with veggies and herbs. They are served with a delicious peanut dipping sauce.
Ingredients - Serves 4
- Carrot - 1, julienned
- Cucumber - 1, julienned
- Bean sprouts - 1 cup
- Fresh basil - 1 bunch
- Fresh cilantro - 1 bunch
- Fresh mint - 1 bunch
- Lettuce - 8 leaves
- Rice vermicelli noodles - 2 cups, cooked
- Cooked shrimp - 16 pieces, peeled and deveined
- Rice paper wrappers - 8 pieces
Let's Get Started
- Dip a rice paper wrapper into warm water until it softens, then lay it flat on a clean surface.
- In the center of the wrapper, place a few pieces of shrimp, a handful of vermicelli noodles, a lettuce leaf, and a few sprigs each of mint, cilantro, and basil.
- Add a small handful of bean sprouts and a few strips of cucumber and carrot.
- Fold the sides of the wrapper in over the filling, then roll it up tightly from the bottom, tucking in the filling as you go.
- Repeat with the remaining wrappers and filling.
- Serve the spring rolls whole, or cut them in half diagonally, with peanut dipping sauce on the side.
