Ingredients - Serves 4

Let's Get Started

  1. Dip a rice paper wrapper into warm water until it softens, then lay it flat on a clean surface.
  2. In the center of the wrapper, place a few pieces of shrimp, a handful of vermicelli noodles, a lettuce leaf, and a few sprigs each of mint, cilantro, and basil.
  3. Add a small handful of bean sprouts and a few strips of cucumber and carrot.
  4. Fold the sides of the wrapper in over the filling, then roll it up tightly from the bottom, tucking in the filling as you go.
  5. Repeat with the remaining wrappers and filling.
  6. Serve the spring rolls whole, or cut them in half diagonally, with peanut dipping sauce on the side.
