Gyeran Bokkeum
Gyeran Bokkeum is a popular Korean side dish made with stir-fried eggs and vegetables.
Ingredients - Serves 2
- Black pepper - To taste
- Salt - To taste
- Sesame oil - 1 teaspoon
- Sugar - 1 teaspoon
- Soy sauce - 1 tablespoon
- Red bell pepper - 1, julienned
- Carrot - 1, julienned
- Green onions - 2, chopped
- Eggs - 4
Let's Get Started
- In a bowl, beat the eggs and set aside.
- Heat some oil in a non-stick pan over medium heat.
- Add the green onions, carrot, and red bell pepper. Stir-fry for 2-3 minutes until the vegetables are slightly softened.
- Push the vegetables to one side of the pan and pour the beaten eggs into the other side.
- Let the eggs cook for a few seconds until they start to set, then gently scramble them with a spatula.
- Once the eggs are cooked, mix them with the vegetables.
- Add soy sauce, sugar, sesame oil, salt, and black pepper. Stir well to combine.
- Continue cooking for another 1-2 minutes until everything is heated through.
- Serve hot as a side dish with rice or as a topping for bibimbap.
