Ingredients - Serves 4

Let's Get Started

  1. In a bowl, combine the pineapple juice, achiote paste, garlic powder, cumin, salt, and pepper. Mix well.
  2. Add the sliced pork to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight for best results.
  3. Heat a grill or skillet over medium-high heat. Cook the marinated pork slices for about 3-4 minutes on each side, or until cooked through.
  4. Remove the pork from the heat and let it rest for a few minutes. Then, thinly slice the cooked pork.
  5. Heat a separate skillet over medium heat. Place a tortilla in the skillet and sprinkle with shredded Oaxaca cheese.
  6. Add some sliced pork, chopped cilantro, and diced onion on top of the cheese.
  7. Place another tortilla on top and press down gently. Cook for about 2-3 minutes, or until the cheese is melted and the tortilla is lightly browned.
  8. Flip the gringa and cook for another 2-3 minutes on the other side.
  9. Repeat the process with the remaining tortillas and ingredients.
  10. Cut the gringas into quarters and serve hot with salsa on the side.
