Gringas
Gringas are a delicious Mexican street food made with marinated pork, melted cheese, and tortillas.
Ingredients - Serves 4
- Salsa - For serving
- Onion - 1/4 cup, diced
- Cilantro - 1/4 cup, chopped
- Oaxaca cheese - 2 cups, shredded
- Flour tortillas - 8
- Salt and pepper - To taste
- Cumin - 1 teaspoon
- Garlic powder - 1 teaspoon
- Achiote paste - 2 tablespoons
- Pineapple juice - 1/2 cup
- Pork shoulder - 1 pound, thinly sliced
Let's Get Started
- In a bowl, combine the pineapple juice, achiote paste, garlic powder, cumin, salt, and pepper. Mix well.
- Add the sliced pork to the marinade and toss to coat. Let it marinate for at least 1 hour, or overnight for best results.
- Heat a grill or skillet over medium-high heat. Cook the marinated pork slices for about 3-4 minutes on each side, or until cooked through.
- Remove the pork from the heat and let it rest for a few minutes. Then, thinly slice the cooked pork.
- Heat a separate skillet over medium heat. Place a tortilla in the skillet and sprinkle with shredded Oaxaca cheese.
- Add some sliced pork, chopped cilantro, and diced onion on top of the cheese.
- Place another tortilla on top and press down gently. Cook for about 2-3 minutes, or until the cheese is melted and the tortilla is lightly browned.
- Flip the gringa and cook for another 2-3 minutes on the other side.
- Repeat the process with the remaining tortillas and ingredients.
- Cut the gringas into quarters and serve hot with salsa on the side.
