Grilled Portobello and Goat Cheese Sandwich

- Salt and pepper - To taste
- Sun-dried tomatoes - 4 pieces
- Baby spinach - 1 cup
- Ciabatta bread - 4 slices
- Goat cheese - 4 ounces
- Balsamic vinegar - 1 tablespoon
- Olive oil - 2 tablespoons
- Portobello mushrooms - 2 large
Let's Get Started
- Preheat the grill or grill pan to medium-high heat.
- Clean the portobello mushrooms and remove the stems.
- In a small bowl, whisk together the olive oil and balsamic vinegar.
- Brush the mushroom caps with the olive oil and balsamic mixture, and season with salt and pepper.
