Grilled Artichokes
These grilled artichokes are a delicious and healthy appetizer or side dish. They are seasoned with herbs and spices, then grilled to perfection.
Ingredients - Serves 4
- Red pepper flakes - 1/4 teaspoon
- Dried oregano - 1/2 teaspoon
- Black pepper - 1/2 teaspoon
- Salt - 1 teaspoon
- Lemon - 1, juiced
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Artichokes - 4 large
Let's Get Started
- Fill a large pot with water and bring to a boil.
- Trim the artichokes by cutting off the top inch and trimming the stem.
- Add the artichokes to the boiling water and cook for 15 minutes, or until tender.
- Remove the artichokes from the water and let them cool slightly.
- Preheat the grill to medium-high heat.
- Cut the artichokes in half lengthwise and remove the fuzzy choke.
- In a small bowl, mix together the olive oil, minced garlic, lemon juice, salt, black pepper, dried oregano, and red pepper flakes.
- Brush the artichokes with the olive oil mixture, making sure to coat both sides.
- Place the artichokes on the grill, cut side down, and cook for 5-7 minutes, or until charred and tender.
- Flip the artichokes and grill for an additional 5 minutes.
- Remove from the grill and serve hot.
