Grilled Artichokes

Ingredients - Serves 4

Let's Get Started

  1. Fill a large pot with water and bring to a boil.
  2. Trim the artichokes by cutting off the top inch and trimming the stem.
  3. Add the artichokes to the boiling water and cook for 15 minutes, or until tender.
  4. Remove the artichokes from the water and let them cool slightly.
  5. Preheat the grill to medium-high heat.
  6. Cut the artichokes in half lengthwise and remove the fuzzy choke.
  7. In a small bowl, mix together the olive oil, minced garlic, lemon juice, salt, black pepper, dried oregano, and red pepper flakes.
  8. Brush the artichokes with the olive oil mixture, making sure to coat both sides.
  9. Place the artichokes on the grill, cut side down, and cook for 5-7 minutes, or until charred and tender.
  10. Flip the artichokes and grill for an additional 5 minutes.
  11. Remove from the grill and serve hot.
