Green Chile
This hearty stew is packed with tender pork and potatoes, and gets its heat from green chiles.
Ingredients - Serves 6
- Cilantro - 1/4 cup, chopped
- Chicken broth - 4 cups
- Potatoes - 2 large, cubed
- Green chiles - 1 pound, roasted and chopped
- Garlic - 3 cloves, minced
- Onion - 1 large, chopped
- Olive oil - 2 tablespoons
- Salt and pepper - To taste
- Pork shoulder - 2 pounds, cubed
Let's Get Started
- Season the pork with salt and pepper.
- Heat the olive oil in a large pot over medium heat. Add the pork and cook until browned on all sides.
- Add the onion and garlic to the pot and cook until the onion is soft, about 5 minutes.
- Add the green chiles, potatoes, and chicken broth. Bring to a boil, then reduce the heat and simmer for 2 hours, or until the pork is tender.
- Stir in the cilantro just before serving.
