Greek Tempeh Gyros
A delicious and healthy twist on the traditional Greek gyros, these tempeh gyros are packed with flavor and nutrients.
Ingredients - Serves 4
- Lettuce - 1 cup, shredded
- Red onion - 1/2, thinly sliced
- Cucumber - 1, sliced
- Tomato - 1, sliced
- Tzatziki sauce - 1/2 cup
- Pita bread - 4 pieces
- Salt and pepper - To taste
- Oregano - 1 teaspoon
- Garlic - 2 cloves, minced
- Lemon juice - 2 tablespoons
- Olive oil - 2 tablespoons
- Tempeh - 8 ounces, sliced
Let's Get Started
- In a bowl, combine the olive oil, lemon juice, garlic, oregano, salt, and pepper. Add the tempeh slices and marinate for at least 15 minutes.
- Heat a pan over medium heat. Add the marinated tempeh and cook until browned on both sides, about 5 minutes per side.
- Warm the pita bread in the oven or on the stovetop.
- Spread the tzatziki sauce on the pita bread. Top with the cooked tempeh, tomato, cucumber, red onion, and lettuce.
- Fold the pita bread over the fillings and serve the gyros immediately.
