Gong Bao Chicken with Shiitake Mushrooms
This Chinese classic features tender chicken, shiitake mushrooms, and peanuts in a spicy-sweet sauce.
Ingredients - Serves 4
- Roasted peanuts - 1/2 cup
- Green onions - 4, sliced
- Shiitake mushrooms - 8 ounces, sliced
- Ginger - 1 tablespoon, minced
- Garlic - 3 cloves, minced
- Dried red chili peppers - 4-6, chopped
- Sesame oil - 1 tablespoon
- Sugar - 1 tablespoon
- Rice vinegar - 1 tablespoon
- Soy sauce - 2 tablespoons
- Cornstarch - 2 tablespoons
- Chicken breast - 1 pound, cut into bite-sized pieces
Let's Get Started
- In a bowl, mix together the cornstarch, soy sauce, rice vinegar, sugar, and sesame oil.
- Add the chicken and toss to coat. Let marinate for 10 minutes.
- Heat a wok or large skillet over high heat. Add a tablespoon of oil and swirl to coat.
- Add the dried chili peppers, garlic, and ginger. Stir-fry for 30 seconds.
- Add the chicken and stir-fry for 2-3 minutes, until browned.
- Add the shiitake mushrooms and green onions. Stir-fry for another 2-3 minutes.
- Add the peanuts and stir-fry for another minute.
- Serve hot with rice.
