Egg Foo Young
Egg Foo Young is a Chinese egg omelette dish made with vegetables like carrots, peas and bell peppers with an easy gravy topping.
Ingredients - Serves 4
- Cornstarch - 1 tablespoon
- Chicken broth - 1 cup
- Vegetable oil - 2 tablespoons
- Pepper - 1/4 teaspoon
- Salt - 1/2 teaspoon
- Soy sauce - 2 tablespoons
- Cooked pork - 1/2 cup, chopped
- Cooked shrimp - 1/2 cup, chopped
- Green onions - 1/4 cup, chopped
- Bean sprouts - 1 cup
- Eggs - 6
Let's Get Started
- In a large bowl, beat together eggs, bean sprouts, green onions, shrimp, pork, soy sauce, salt, and pepper.
- Heat oil in a large skillet over medium-high heat. Scoop about 1/2 cup of the egg mixture into the skillet and flatten to make a pancake. Cook until golden brown, about 2 minutes on each side. Repeat with remaining egg mixture.
- In a small saucepan, bring chicken broth to a boil. In a small bowl, mix cornstarch with a little cold water to make a slurry, then stir into the broth. Cook until thickened.
- Serve the egg foo young pancakes topped with the gravy.
